Well, yes, there's a lot you should know. That's why Kaos said to do some reading and research. You can't be on this update to do the unlock. You must be on a previous update as this update patches the bootloader unlock exploit. You must be rooted in order to run the unlock successfully. Once you do unlock, forget about voodoo and exploits and any other nonsense. Learn to install root with custom recovery and then after any updates you take, you can reinstall recovery and flash root. Done. But there's a lot of caveats and things you need to know. There are threads here that you should find and read on these topics.

Installing TWRP on an unlocked phone has NOTHING to do with root. At all. Please read this thread:

As long as you haven't installed the OTA, yes. Otherwise, no.

When I try to flash TWRP it says system/bin/sh:su:can't execute:permission denied
How are you trying to flash? If it's with an app on the phone, then yea, obviously that's not going to work. Flash it with fastboot in AP Fastboot mode. Then make sure you do NOT boot your phone...you must flash, turn off the phone, and boot directly into recovery or it will replace it with stock recovery.

Then root with motochopper and then use motoapocalypse to unlock. Then you can take the OTA, install custom recovery, and flash root in custom recovery.

If I root can I delete the OTA ?

Yes, but, it'll come back if you don't freeze the updater. You need root for that, as well. It's in /cache I believe. And you must be rooted to see it.
