Just to play around with and maybe to get my 8 year old interested in programming. so questions:
What do I need as basic hardware?
What comes with it?
Do I need to get a separate monitor, keyboard, mouse?
what else should I know?
Thinking of picking one of these up...

There are sooo many different kits available it is unreal.
You can get anything from the bare board, to any combination of Media Center configurations, electronics experimentation kits, etc.
It has all the ports you need to connect your basic stuff.

cool. So if I have a macbook, can I hook it up to that? Or do I need a separate monitor, mouse and keyboard?

Well, there are ways to set up teamviewer once it's all installed, but I think you need to have at least a TV with a yellow video in and a mouse and keyboard to get you started.

I just use my TV with the HDMI and a keyboard. After you have everything setup you can set up ssh server on the pi depending on your application of the pi

It remotely gives you access to the terminal. Basically there is no graphical interface (GUI). To move a file, you don't drag and drop. Instead you do: mv source/file.txt /destination/file.txt

The nice thing with ssh access is with having raspmbc installed there isn't a direct way to modify system files but I can ssh in and access those files

The best thing to do is pick up a Unix book since most of the operating systems will be Unix based due to light weight properties of the system

One of the best things you can do is pick up a Unix book. It will help you understand how the operating system works differently from Windows. You will also get a good foundation of the basic commands. I will warn you it will be dry. I remember nearly fall asleep every day of my Unix class in college.
