When I create a back up there is file name and I hit OK. The phone then reboots into recovery mode. I tried looking in the TWRP folder while in recovery, but the back up I created is not there. Is it supposed to go to recovery after saving the file and where is the file??

Also the bootloader in unlocked. I don't know if that makes a difference or not.

Which version of TWRP are you using?  The newer one makes a very large file name.  Try changing the name and then backing up after that.

Not sure od the version. I downloaded it from the playstore. I did try changing the name but it didn't matter.

The name length is important like RikRong states. Also, have you looked in both the internal and external SD locations. Twrp creates a folder in each location and depending on which one you have it set to backup to is where it will be.

So if you downloaded it from the play store, that would be TWRP manager. I had no luck using this and just went to recovery the old boot into it manually way. Had better luck with that. Check your version of TWRP and upgrade if you haven't already.
